Strawberry Toastwich

1/4 cup soft butter or margarine
12 slices enriched bread
3/4 cup strawberry preserves
2 slightly-beaten eggs
1/3 cup milk
1/2 teaspoon salt

1 tablespoon sugar
1/4 cup shortening
1 1/2 tablespoons confectioners' sugar

Butter bread. Make 6 sandwiches by placing 2 tablespoons strawberry preserves between two slices of buttered bread. Combine eggs, milk, salt and sugar. Dip each sandwich into egg mixture, turning it to coat both sides. Brown sandwiches, on both sides, in small amount of hot shortening in a skillet. Shake a little confectioners' sugar over top of each toastwich. Makes 6 toastwiches.

I bet you could put some cream cheese (ooh lovely thoughts about some cinnamon raisin walnut cream cheese) and the fruit preserves, like a stuffed french toast... delish!!!

Ooh, that is a good idea. Cream cheese makes everything better (bagels, cakes, salsa dip...), perhaps even a fruit chutney of some sort.

I've actually used peach, apple and/or lemon preserves in these and they are good too!

Oh, totally. And this isn't the only one I have! They normally came with your toaster when you bought it. Toasters were the MP3 players of the 40's and 50's. It wasn't uncommon to see one on tables at both homes and restaurants. much like salt & pepper is today. America loves its toast!
